While I was visiting my sister last week we were invited to a cookout.
Our contribution was dessert.
I knew exactly what we needed to bring.
Peanut Butter Brownie Trifle
I found this recipe a while back and actually made it once before for our speech club.
It is completely decadent and oh so delicious.

My nephew assisted me with the recipe and turned out to be a great sous chef.
He was also the official "taste tester" (and he only ate a few of the Reese's).
Peanut Butter Brownie Trifle
(slightly adapted from Taste of Home)
1 fudge brownie mix (13-inch x 9-inch pan size)2 packages (13 ounces each) miniature peanut butter cups
4 cups cold 2% milk
2 packages (5.1 ounces each) instant vanilla pudding mix
1 cup creamy peanut butter
4 teaspoons vanilla extract
2 cartons (8 ounces each) frozen whipped topping, thawed
Prepare brownie batter according to package directions. Bake in a greased 13-in. x 9-in. baking pan at 350° for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack; cut into 3/4-in. pieces. Cut peanut butter cups in half; set aside 1/3 cup for garnish. In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Add peanut butter and vanilla; mix well. Fold in 1-1/2 cartons whipped topping. Place a third of the brownies in a 5-qt. glass bowl; top with a third of the remaining peanut butter cups. Spoon a third of the pudding mixture over the top. Repeat layers twice. Cover with remaining whipped topping; garnish with reserved peanut butter cups. Refrigerate until chilled.

ReplyDeleteOh no, I hope that it thickened up for you. I know it's a little late now but I usually just add a little cornstarch if it's not thick enough. Sorry I'm late with help. Hope it turned out ok.

ReplyDeleteI made this a few days ago for my husband's company Christmas Party. It was a huge hit and delicious. I made everything exactly as recipe stated. I saw some previous people say the pudding was runny. If you do not mix the pudding the full 2 minutes as the recipe states then it will be runny. Once you continue mixing it gets a thick consistency. This will be my dish I bring to parties and pot lucks for now on. It was easy to make, but looks like you spent hours making. Thank you for this recipe!

ReplyDeleteI made this the night before Thanksgiving hoping to save on time and then remembered the brownies might get soggy. Luckily they didn't! Everyone loved it. I am making it again tomorrow with the banana pudding. This time I will be reducing the amount of peanut butter cups. We love them but for some reason they seemed like alot to us. Maybe because I accidentally bought the smaller pudding mix? Either way, delicious!

ReplyDeleteplanning on making this in the morning, but doesn't seem like 2 cups of whipped topping is enough according to the amount I c on top of the desert. Did u use more than a 1/2 of the 1 litre tub of cool whip?
ReplyDeleteI used 2-8oz. cartons. For me it was enough, but if you would like more, I say go for it!! You really can't lose.

ReplyDeletei made one similar to this and sorry but the peanut butter cups ruined any recipe. they are too hard and chunky to be put in a dessert like this.
