This recipe serves 4 appetizer servings
Roasted Shrimp
1 pound large shrimp (about 15 per pound)
2 garlic cloves, finely chopped
1 tablespoon Olive Oil
Salt
Pepper
Preheat oven to 450 degrees. Peel and devein shrimp, leaving tails on. On a large, rimmed baking sheet place shrimp and garlic. Season liberally with salt and pepper. Drizzle olive oil over shrimp and garlic. Mix well and place shrimp in a single layer.
Place baking sheet in oven. Roast shrimp for 2-3 minutes and turn each one over with tongs. Roast shrimp another 2-3 minutes until done. Remove shrimp from baking sheet, place in a bowl and put in the refrigerator. Chill at least 2 hours.
Spicy Cocktail Sauce
1/2 cup ketchup
1/2 cup chili sauce
1 teaspoon finely chopped jalapeno pepper
2 tablespoons prepared horseradish
juice from 1/2 lemon
Mix all ingredients and chill. Add additional lemon juice to taste.
